Here are a few examples of websites I have done. My take has always been that straight forward and simple is the best way to convey your information. While Flash and other bells and whistles might have a dazzle to them they require plugins and decent connection speeds etc. and limit those who can see your site and can be a challenge to one's patience. By making the sites visual but simple you don't handcuff the viewer and make your information much easy for anyone to access.
